Specifically EDXON’S MEXICO JUICE!

Time to butcher the Spanish language, but with a gorgeously smoky drink in hand! Mezcal O'Clock! Technically a Smoky Pear & Ginger Margarita, but dubbed Edxon's Mexico Juice on the fly, it's my favourite style of cocktail lately. Smoky, spicy, salty, sweet, tart and tequila...and mezcal.

Also an opportunity to try making a spiced sugar cane simple syrup with ingredients from our local tienda!

EDXON’S MEXICO JUICE

recipe from FOOD52 with a text from Ex and a few audibles called…

INGREDIENTS

1 1/2oz Pear Juice
1oz Tequila (We used Milagro Silver)
1oz Mezcal (We used Creyente Mezcal Joven)
3/4oz freshly squeezed lime juice
1/2oz spiced piloncillo simple syrup (see below)*
1-2 dash aromatic bitters (We used Grapefruit Bitters)
1 piece fresh ginger thinly sliced
1 tbsp Black Cyprus Flaked Sea Salt for salt rim
1 thin slice fresh pear for garnish

Piloncillo Cane Sugar Spiced Simple Syrup*
INGREDIENTS

1 cup water
1 cup sugar
1 - 8oz piloncillo cone (SMASHED WITH A HAMMER)
6 whole cloves
1 cinnamon stick

Piloncillo Cane Sugar Spiced Simple Syrup
DIRECTIONS

Throw all ingredients into a pot and bring to a boil.
Reduce heat and let simmer for 5-10 minutes.
Let cool and strain into a mason jar.
Sealed tight and refrigerated, will last indefinitely.
(Long enough to make all the margaritas you can handle, to be sure)

DIRECTIONS

Muddle the ginger in a cocktail shaker.
Add ice, tequila, mezcal, lime juice, pear juice, simple syrup, and bitters.
Shake until chilled.
Strain into a salt-rimmed highball glass filled with ice.
Garnish with pear slice.
