Judy’s back with another recipe. This one is a super cherished family recipe that her children really struggled with sharing. This recipe is apart of every Kotylak family gathering! We hope you enjoy! Oh and, it was really hard to come up with a pun for this, too many great songs and raps about ‘buns’! We finally settles on a Blues song by Muddy Waters, after all it is Judy’s recipe! If this was on Revival’s menu we’d call it…
FUNKY BUNS
OVERNIGHT BUNS
Mum’s Overnight Buns
Makes about 4 dozen
INGREDIENTS
12 - 12.5 cups flour
1 yeast envelope
4 cups warm water
1 cup cooking oil or shortening
1 cup sugar
1 egg
1 tbsp salt (15 ml)
1 tbsp sugar (15 ml)
DIRECTIONS
Dissolve yeast and 1 tbsp of sugar into 1 cup of warm water.
Let set for 10 minutes, or until frothy. Hint: not all yeast will double in size. Make sure your’s will before you proceed.
In a large bowl beat egg in 1 cup of sugar and 1 cup of oil.
Add remaining water (3 cups) with salt.
Make hole in flour, and add yeast and water/sugar/oil mixture. Mix by hand until it is the right consistency to be turned out and kneaded.
Knead it... adding flour until it is no longer too sticky after several kneadings. (Takes about 5 minutes of kneading to get to the right consistency.
Put in a bowl to rise with a damp cloth covering it.
Start around 4:00pm and punch down at 8:00pm.
Around 11:00pm put into muffin tins. Two balls of dough in each cup.
Cover with a dry cloth, and let rise overnight.
Cook in the morning in a preheated 350 degree oven for 12 - 18 minutes (or 375 for 15 minutes).
Remove immediately from pans.
Let cool and bag while still warm.
