KETO SAUSAGE STUFFED PEPPERS

INGREDIENTS

  • 2 tbsp olive oil 

  • ½ medium onion, small diced

  • 2 cloves garlic, minced

  • 2 cups fresh spinach

  • 4 bell peppers (any colour)

  • 250 g cream cheese, softened

  • 4 - 6 fresh sprigs thyme

  • 1 tbsp red pepper flakes

  • 1 cup cheddar cheese, shredded

METHOD

  1. Heat up the oven to 375 F

  2. Cut the peppers in half and carefully remove the guts. (see note)

  3. Using 1 tbsp of the olive oil rub down the peppers and season lightly with salt and pepper. 

  4. Cover a sheet pan in parchment paper and bake pepper shells skin side up for 5 mins to soften and brown. Let cool.

  5. Heat the olive oil up in your frying pan on medium heat.

  6. Add the onion and the garlic and sauté until translucent. 

  7. Cut open sausage links and add the ground meat to the pan. Stir and break into smaller pieces with your spatula.

  8. Add the spinach, thyme and the red pepper flakes. Cook until spinach is wilted.

  9. Cook until sausage is cooked through about 5 - 7 mins.

  10. Drain excess fat from the sausage pan and add the cream cheese to the pan

  11. Melt cream cheese into the sausage mixture until well combined.  Season with salt and pepper to taste and set aside. 

  12. Fill peppers with sausage mixture and cover the top with the shredded cheese.

  13. Bake until the shredded cheese is melted and browns a bit.  About 10 more minutes and then cool and serve!

*** NOTE *** Peppers can also be cut horizontally and the tops saved to be used as cute lids for presentation.  You can eat the whole pepper too, so you can also cut it lengthwise, but up to you!
