Tomatillo’s are green tomatoes that have a papery husk covering them. Most likely you have consumed them in salsa verde or green enchilada sauce. I wanted to try doing something a little different with them so I decided to turn them into jam! I love it! The jam is tart, yet slightly spicy. I ate it with a pastrami sandwich and it was divine. TOMATILLO JAM
made approximately 2 cups worth of jam…
INGREDIENTS
Tomatillos: 9 medium
Jalapenos: 4 medium
Limes: 2
Sugar: ½ cup
DIRECTIONS
Preheat broiler to 425 degrees Fahrenheit.
Cut tomatillo's into quarters and remove cores. Put on baking tray.
Cut jalapenos in half, remove seeds and stems. Add to tray with tomatillo's.
Roast tomatillos and jalapenos until skin is blistered. Approximately 20 mins.
Transfer tomatillo's and jalapenos to a pot and add sugar and the juice of two limes.
Simmer on medium heat, stirring occasionally and using the spatula to mash the ingredients.
Cook until the mixture thickens to the consistency of jam. Approximately 45 mins.
Note as you get closer to being finished pay extra attention and stir frequently.
