GIMME SOME MOMO

NEPALI PORK MOMOS

Each person made them a little bit different but the basic ingredients were the same.  I am using chinese chives in this recipe but you could omit them. They have a delicate light garlic flavour that I just love. You can find them at an asian supermarket. This version of the tomato chutney is mildly spicy. Add an additional Thai chile pepper to spice it up.

Making your own dough is easy but tedious so for this recipe I am using commercially purchased wraps.  I never really got good at the technique for rolling the dumplings so my family just seals it into whatever shapes we want. 

INGREDIENTS
for the momos:

Wonton Wrappers: 1 pack
Ground Pork: 750 g
Green Onions: ½ cup
Ginger: 3 cm piece
Chinese Chives (optional): ½ cup
Coriander: 1 tbsp
Cumin: 1 tbsp
Turmeric: 1 tbsp
Salt: 1 tsp
Egg: 1
Water: to seal the wontons

DIRECTIONS
for the momos:

  1. Mince your ginger, green onions and chives.

  2. Combine all ingredients into a bowl and thoroughly mix it together. 

  3. Pick up a wonton wrapper and place a ball of meat filling in the middle, about 3 cm wide Leave plenty of room around the edges to seal the wrapper shut. 

  4. Wet the border of the wrappers using your water with your finger. 

  5. Seal your wonton edges together in the pattern of your choice, making sure to pinch the edges shut. 

  6. Steam wontons for 6 or 7 mins or until an internal temperature of 165 degrees F.

for the tomato chutney:

Tomatoes Large: 4
Yellow onion: 1
Thai chile pepper: 1
Ginger: 1 tbsp
Cilantro: ½ cup
Garlic: 3 cloves
Brown sugar: 1 tsp
Salt & Pepper: to taste

DIRECTIONS
for the tomato chutney:

  1. Preheat the oven to 425 degrees F.

  2. Cut tomatoes and onions into large chunks and roast in the oven along with the cloves of garlic until lightly charred, 15 - 20 minutes.

  3. Pulse all ingredients together in a food processor until almost smooth.
